Located in the historic center of Arequipa, in an area protected by UNESCO, the Parador dates back to the year 1540 when the city was built.
CIRQA honors its heritage by maintaining Arequipa traditions and practices, such as the warm attention with which the monks welcomed travelers in the ancient monasteries. Honoring its history, the Parador combines its original ashlar architecture with contemporary designs.
Arequipa's gastronomy is recognized for the use of various local ingredients, flavors and spices. The Parador presents a cuisine inspired by the flavor of the Arequipa picanterías, capturing the essence of the region and the typical dishes. The CIRQA menu, created by Maria Fé García, is based on simplicity and loyalty to traditional food.
«My style focuses on simplicity with abundant flavor, exhibiting the authentic essence of the gastronomy of each destination. The success of a kitchen is only achieved when new knowledge is combined with what is already known; Old traditions are not replaced, but are valued and used. »
